Mushrooms make for some tasty soup!

Garnish it with some fresh thyme and truffle oil and you’re in for a treat.

  • 50 g salted butter
  • 2 tsp tsp thyme fresh or dried⁣
  • 1 brown onion
  • 2 cloves garlic ⁣
  • 600 g white mushrooms ⁣ sliced
  • 600 g chestnut mushrooms ⁣ sliced
  • 2 chicken stock cubes ⁣in 1L water
  • 350 ml whole milk ⁣
  • 200 ml double cream ⁣


  • Finely chop onion and add to pot with butter & thyme, allow to soften
  • Add finely chopped garlic, fry for 2 minutes, then add sliced mushrooms
  • Roughly chop mushrooms and add to pot, cover with lid and cook for 5-10 minutes (mushrooms have a lot of water so shouldn’t stick as will release this during cooking)
  • Add chicken stock and milk, simmer on medium heat for approx 30-40 minutes (with lid on ideally)
  • Add double cream and blitz 2/3 of the soup to retain some chunks throughout or blitz it all if you want a smooth soup
