Roasted Tomato & Basil Soup

Is there a better soup for when you’re unwell than tomato soup?! When I was younger it always had to be @heinz_uk but nowadays it’s only homemade that cuts the mustard!

Ingredients
  

  • 30 g pack of fresh basil 1 x pack
  • 4 stalks celery
  • 1 red chilli
  • 18 large vine tomatoes
  • 300 g cherry tomatoes
  • 1 garlic I only used half once roasted with all the veg
  • olive oil
  • sea salt

Instructions
 

  • Line a baking tray with tinfoil and pre heat oven to 200C fan
  • Add basil leaves to the bottom of the tray – this ensures they don’t burn whilst roasting
  • Quarter tomatoes and add them to tray with chopped celery, chilli, olive oil and sea salt
  • Cut the top off a bulb of garlic, place in tinfoil, drizzle with olive oil & salt then close the tinfoil around it – place in the middle of the tray
  • Roast the vegetables for approx 40-50mins
  • Remove from oven, add to blender and blitz until smooth
