This 5 Minute Eton mess recipe is in regular 'need dessert in a hurry' rotation in my house, alongside my Rice Pudding (as it requires little 'hands on' time).

Utilising fresh Scottish berries when in season, I love to create light and fresh desserts that the whole family can enjoy.
Various elements of this recipe are also transferable to other desserts - the Chantilly cream and the blended strawberry sauce. They're things you'll find yourself making again and again for ease and quick deliciousness.
Ingredients for Eton Mess
Six ingredients and 5 minutes - that's all that's needed!

- Meringues
- Berries: strawberries and raspberries
- Chantilly Cream: double (heavy) cream, caster sugar and vanilla extract
How to Make Eton Mess
Add double cream, caster sugar and vanilla extract to a bowl and use hand whisk (or stick blender) to whip until stiff peaks are formed when lifted.
I timed this, to ensure I achieve the 5 minute objective - and whipping this together took 2.5 minutes so we're on track!


Remove green tops from strawberries (either chop them off or just pull the green bits out), add to blender and blitz until smooth (this is the sauce) - retain a couple of strawberries for garnish if desired. 1.5 minutes...


Assembly
It then took me 1 minute to assemble the Eton mess; simply because we're going for the rustic, thrown together look):
Either mix raspberries through the whipped cream or add cream to bottom of individual bowls (or you can take a trip back to the 80's and serve them in a glass) and top with fresh raspberries. Then crush over some meringue and drizzle over strawberry sauce.

Repeat the same process again: cream, raspberries, merging and sauce for a second layer. Garnish with some fresh fruit at the top and mint leaves if you’re feeling fancy! Et viola! All finished in 5 minutes - now go enjoy it!
Storage
How long can you store Eton Mess for? it will store for 3 days in the fridge in individual elements (although the Chantilly cream will lose some of it's oomph), so please consider below.
If looking to make Eton Mess ahead of time: prepare all elements separately and store separately, then assemble to serve.
The most important element is do not add the meringues until you are ready to serve. This is to avoid meringue going soft in the cream mix.
