Find yourself with some post-dinner sweet cravings but little energy? Look no further than this 5 Minute Eton Mess recipe - sweet, creamy, zingy and light - everything you need and more.
Add 300 ml double cream , 1 tablespoon caster sugar and 1 teaspoon vanilla extract to a bowl and use hand whisk (or stick blender) to whip until stiff peaks are formed when lifted
Remove green tops from 300 g strawberries, add to blender and blitz until smooth (this is the sauce) - retain a couple of strawberries for garnish if desired
Either mix 200 g raspberries through the whipped cream or add cream to bottom of individual bowls and top with fresh raspberries
Then crush over some meringue and drizzle over strawberry sauce
Repeat the same process again: cream, raspberries, merging and sauce for a second layer
Garnish with some fresh fruit at the top and mint leaves if you’re feeling fancy!

How long can you store Eton Mess for? it will store for 3 days in the fridge in individual elements (although the Chantilly cream will lose some of it's oomph), so please consider below.If looking to make ahead of time: prepare all elements separately and store separately, then assemble to serve.The most important element is do not add the meringues until you are ready to serve. This is to avoid meringue going soft in the cream mix.
