This amazingly simple Three Ingredient Tomato Soup will blow you away with flavour! Three main ingredients - tomatoes, celery and garlic, seasoned with salt and drizzled in olive oil - roasted in the oven for maximum taste.
This is the story of a girl, who instead of spending all of her disposable income on make up and fashion, spends it on food. And when I find myself spending £6.50 ($8.75) on a 500ml(!!) bottle of Maison Marc Tomato Soup, I start to question my choices. So let's make it instead!

So like any cook, I reviewed the ingredients in the pursuit of creating a recipe to copy it As otherwise, it was becomings an extremely expensive habit.
And what I saw shocked me - my favourite ever Tomato Soup had three ingredients. Super simple. And yet ridiculously tasty.
Key Considerations for Success
- Use Vine Tomatoes (ideally when they're in season i.e. May-Oct in UK)
- Use the best quality Extra Virgin Olive Oil you can source
- Use flakey sea salt, like Blackthorn Sea Salt
- Do NOT skip roasting the veg - it brings so much flavour to the party!
Unaesthetic photo, but this is the extent of my obsession: super simple tomato soup with a cheese toastie - heaven on a plate! Even better because the toastie was made using Barnett's Bakery Cheese and Leek loaf.

Ingredients for Tomato Soup

- Tomatoes
- Celery
- Garlic
- Extra Virgin Olive Oil
- Sea Salt and Black Pepper
How To Make Three Ingredient Tomato Soup
Preheat oven to 200C (fan) / 240C conventional / 390F.
Line baking tray with baking paper (parchment) and start to layer on prepared vegetables: chopped celery, quartered tomatoes and peeled garlic.


Add additional pantry items: olive oil, salt and pepper.


Roast in oven for 45 minutes. Then blend until smooth and pass through a fine sieve to remove all seeds and skin.



Storage and Reheating
This soup stores really well; it's a great batch cook meal or make-ahead Soup Course for dinner parties. My kids love it too!
- Fridge: 4-5 days
- Freezer: 6 months
Reheat the Tomato Soup by heating up in microwave or in a pot on the hob until piping hot throughout.

Three Ingredient Tomato Soup - Tastiest Ever!
Ingredients
- 20 large vine tomatoes quartered
- 6 stalks celery
- 100 ml extra virgin olive oil
- 6 cloves garlic peeled
- sea salt
- cracked black pepper
Instructions
- Preheat oven to 200C (fan) / 240C conventional / 390F
- Line baking tray with baking paper (parchment) and prepare vegetables: quarter 20 large vine tomatoes, chop up 6 stalks celery and peel 6 cloves garlic
- Add all vegetables to baking tray and drizzle with 100 ml extra virgin olive oil, sprinkle with sea salt and cracked black pepper
- Oven bake for 40-50 minutes
- Remove from oven, add to blender and blitz until smooth
- Pass soup through a fine sieve to remove all the 'bits' (seeds and skin)
- Then serve up a silky smooth tomato soup that couldn't be easier!
