You might question the credibility of my claim when saying this three ingredient Tomato Soup is the "tastiest ever", but don't think too soon! If you make it using vine tomatoes during tomato season, then I can guarantee you'll be blown away by the simplicity and resulting flavour. Try it, and let me know.
Preheat oven to 200C (fan) / 240C conventional / 390F
Line baking tray with baking paper (parchment) and prepare vegetables: quarter 20 large vine tomatoes, chop up 6 stalks celery and peel 6 cloves garlic
Add all vegetables to baking tray and drizzle with 100 ml extra virgin olive oil, sprinkle with sea salt and cracked black pepper
Oven bake for 40-50 minutes
Remove from oven, add to blender and blitz until smooth
Pass soup through a fine sieve to remove all the 'bits' (seeds and skin)
Then serve up a silky smooth tomato soup that couldn't be easier!
