
Peanut Butter Curry
I wanted to share a curry with you that was: easy to makemade from basic condiments (not a million different kinds) accessible/mild (perfect for families with young children) whilst also introducing a common allergen, which is important! If you are offering to young children (< 2 year old), shred the chicken instead of using chunks

Ingredients
- 30 g ghee or vegetable oil
- 1 onion
- 1 tsp garlic paste
- 1 tsp ginger paste
- 2 tsp garam masala
- 100 g smooth peanut butter
- 250 ml coconut milk
- 100 ml passata
- 2 chicken breasts
- handful coriander optional
Instructions
- Prepare chicken: either chop into chunks and fry in ghee, then remove from pan before progressing with next steps. Or alternatively poach the chicken in water or stock then shred it.
- Soften chopped onion in ghee in pan
- Add ginger, garlic & garam masala and fry for 2 minutes
- Add peanut butter, allow to melt, then add coconut milk and passata – simmer for 10mins on medium heat
- Add in chicken & chopped coriander
- Serve with rice or naan
