Lamb Shank Ragu with Fresh Tagliatelle

Lamb shanks are a wonderful cut of meat for the slow cooker – it falls apart and shreds beautifully after its long tasty bath in stock, wine and juices. I've made this so many times and not shared the recipe, so I figured now was the time as it's not fair that I keep its deliciousness to myself for any longer!
If you don't want to use wine (if you don't use alcohol or don't want to use it for young kids) then just increase the volume of stock you're using and deglaze your pan simply with balsamic vinegar and tomato paste.
