One Pan Beef and Broccoli Noodles

This quick and easy one pan meal, Beef and Broccoli Noodles, is the perfect family friendly meal that can be ready in 30 minutes, which makes it perfect for mid-week meals

This Beef and Broccoli Noodles dish is a great alternative to my usual rotation of beef mince recipes, which take a lot more time to make e.g. bolognese ragu, lasagne, meatballs.

It’s a simple, tasty and balanced meal option for midweek meals where you need low effort, but plenty of yumminess! It also makes an excellent meal prep option for a packed lunch as it reheats well (see Storage + Reheating section below).

Suitable For The Whole Family (Weaning Information)

Suitable from 6 months old + (Baby Led Weaning / BLW)

I personally would be comfortable feeding this to my baby after they start weaning. If following BLW, you want them to enjoy the same meal as the rest of the family.

Note: due to the salt content in soy sauce and also the sugar in the sauce, it’s important to balance the rest of babies meals throughout the day so you don’t exceed the recommended 1g of salt per day for babies less than 1 year old. 

Some people would prefer not to offer any additional salt / sugar to babies between 6 – 12 months. So if this is your preference, then wait until after 12 months to offer this to your child. 

Ingredients + Substitutions 

Oil: I use vegetable oil as its a neutral oil, you could also use peanut oil (as long as you aren’t allergic) 

Beef Mince: you could easily substitute this for pork mince or even chicken mince if you wanted to

Salt + Pepper

Garlic + Ginger: I use garlic and ginger paste in this recipe for quickness, but you can substitute for ‘real’ garlic (2 cloves) and ginger (thumb sized piece – grated) if preferred.

Mushrooms: any mushrooms you have available would work in this dish, or if you don’t like them then simply omit them from the recipe. Other vegetables that could work are: thinly sliced courgette, green beans or mangetout (you need vegetables that will cook quickly).

Broccoli

Noodles: you’re looking for straight to wok noodles for this dish, as otherwise you’ll need to make noodles separately (which isn’t the end of the world, but it’s wouldn’t be a one pan meal then).

Soy Sauce: I use dark soy sauce as the dish can hold up to the extra strength, but if you only have regular soy (light), maybe just use a little more

Oyster Sauce

Vinegar: I use rice vinegar as it is appropriate to the cuisine we’re cooking (Asian), however if you don’t have any then substitute for any vinegar (white, red, cider etc) 

Sugar: any type of sugar can be used (white, granulated, golden, brown) 

Sesame Oil: this is an optional ingredient, and is added in to the sauce at the end so the sesame aroma and flavour is retained. If you cook with sesame oil from the beginning, it loses all its oomph.

How To Make Beef + Broccoli Noodles 

Add vegetable oil, mince (season with salt & pepper), garlic paste & ginger paste to deep sided pan / wok – fry until meat has browned on medium/high heat.

Add chopped mushrooms and broccoli to pan, cook with lid on (using a dash of water if required) until vegetables have softened (approx 5-10mins).

Whilst vegetables are cooking, add the following ingredients into a bowl to make the sauce – sesame oil, dark soy, oyster sauce, rice vinegar and sugar – if easier.

For the purposes of this step by step, I’ll show you the ingredients being added:

Add straight-to-wok noodles & sauce to pan – stir through.

Fry on high heat for a couple of minutes to combine before serving your Beef and Broccoli Noodles.

Storage and Reheating 

How long does it keep in the fridge – approx. 3-4 days as long as your fridge is below 4C

Can you freeze it – due to the thin nature of the sauce, I wouldn’t recommend freezing it. It’s a dish thats better enjoyed fresh.

Reheating – reheat in the microwave until piping hot throughout.

Ingredients
  

  • 2 tbsp vegetable oil
  • 500 g mince
  • salt & pepper
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 200 g mushrooms
  • 1 whole broccoli
  • 140 g noodles straight to wok noodles
  • 3 tbsp dark soy
  • 3 tbsp oyster sauce
  • 2 tbsp rice vinegar
  • 2 tbsp sugar
  • 1 tbsp sesame oil

Instructions
 

  • Add 2 tbsp vegetable oil, 500 g mince (season with salt & pepper), 1 tsp garlic paste & 1 tsp ginger paste to deep sided pan / wok – fry until meat has browned on medium/high heat
  • Add 200 g mushrooms (chopped) and 1 whole broccoli (chopped) – cook with lid on (using a dash of water if required) until vegetables have softened (approx 5-10mins)
  • Whilst vegetables are cooking, add the following ingredients into a bowl to make the sauce – 1 tbsp sesame oil, 3 tbsp dark soy, 3 tbsp oyster sauce, 2 tbsp rice vinegar and 2 tbsp sugar
  • Add straight-to-wok 140 g noodles & sauce to pan – fry on high heat for a couple of minutes to combine before serving
