
Slow Cooked Lamb Ragu Tagliatelle
Lamb shanks are a wonderful cut of meat for the slow cooker – it falls apart and shreds beautifully after its long tasty bath in stock, wine and juices. I've made this so many times and not shared the recipe, so I figured now was the time as it's not fair that I keep its deliciousness to myself for any longer! If you don't want to use wine (if you don't use alcohol or don't want to use it for young kids) then just increase the volume of stock you're using and deglaze your pan simply with balsamic vinegar and tomato paste.Lamb Shanks from Damn Delicious Farm in Bigger .

Ingredients
- 500 g lamb shank
- 1 onion
- 2 red peppers
- 3 garlic cloves
- 2 tbsp balsamic vinegar
- 2 tbsp tomato paste
- 200 ml red wine
- 1 lamb stock cube in 300ml water
- 1 tsp paprika
- 1 tsp oregano
- 300 g fresh egg tagliatelle
- 20 g parsley
Instructions
- Finely chop onion, peppers and garlic & place in base of slow cooker
- Season lamb shank with olive oil & salt and sear in frying pan before removing from pan & placing in slow cooker
- Dissolve stock cube in water and add that to the slow cooker along with tomato paste, paprika and oregano
- Add balsamic vinegar to pan with lamb juices and cook for a minute on low/ heat to deglaze pan
- Pour in wine and simmer for 2 minutes to cook off the alcohol then add to slow cooker
- Cook on Low for 8 hours or High for 4 hours
- Remove lamb shanks from slow cooker and shred the meat, add back into the juices in the slow cooker
- Cook fresh pasta until al dente then mix through the lamb rags to serve – add optional garnish of fresh parsley
