Whether you're looking to save oven space or only want to make enough for two people, these Beef Dripping Roast Potatoes in Air Fryer are quick, easy and result in simply perfect roasties!
1kgpotatoese.g. Maris Pipers / King Edwards / Yukon Gold - unpeeled weight
3tablespoonbeef drippinganimal fat or vegetable oil / rapeseed oil
sea salt
Instructions
Peel 1 kg potatoes and chop into chunks - add to cold, salted water
Bring to the boil, then boil for 15 minutes (after water is boiling) - so approx. 7 minutes until water is boiling, then 15 minutes thereafter (total 22 minutes)
Drain in colander, allow to steam dry then shake well to rough up the outside
Add 3 tablespoon beef dripping to airfryer tray and heat for a few minutes before adding par-boiled potatoes
Ensure potatoes and fully coated in hot oil (toss them with a spoon) then airfryer for 15 minutes at 200C
Open the airfryer, toss the potatoes with the spoon again and cook for another 20 minutes
