If you love a classic Alfredo pasta,
I was verrrrrry happy with this dish when I made it! So excited, in fact, that I decided to push the other recipe I had planned for posting in favour of this one 😍
I don’t LOVE creamy pasta dishes usually, but the cajun spice adds enough of a kick to lift it from the depths of uber creaminess and into the heights of damnnn this is good!

Cajun Chicken Alfredo
The chicken breasts are from @falleninchfarm. Like anything from a butcher, the quality is significantly superior to supermarket meat.

Ingredients
- oil To preference
- 2 chicken breast butterflied
- 3 tbsp Cajun seasoning
- 50 g salted butter
- 3 cloves garlic
- 100 ml white wine
- 220 ml double cream
- 100 g parmesan
- 150 g cooked broccoli florets
- 250 g pasta
- 1 dash pasta water
Instructions
- Add oil to a pan and heat until oil is shining
- Butterfly chicken breasts (cut breasts in half so you have thinner fillets)
- Measure out Cajun seasoning in a bowl and season the chicken on one side using the cajun spice, salt & pepper
- Add the chicken spice side down and fry for a few minutes, season the top side and then flip over and cook until chicken is finished (165F internal temp)
- Cook pasta until al dente and reserve a little pasta water
- Add butter and garlic to the pan and fry for 30 seconds
- Then add wine to deglaze and simmer until reduced by half
- Add splash of past water, then double cream, chopped broccoli & any remaining cajun spice, simmer for a few minutes until slightly thickened
- Stir through parmesan then add cooked pasta and toss to combine
- Add sliced chicken on top to serve
