Tuscan Chicken Alfredo Pasta

👨‍👩‍👧‍👦 Suitable for the whole family (babies 9m+)
👶🏼 switch to reduced salt stock cube and unsalted butter, shred chicken if serving to babies under 2yo, parmesan can be high in salt so either reduce or serve baby before adding

Ingredients
  

  • 3 chicken breasts
  • 40 g salted butter
  • olive oil
  • 1 brown onion
  • 3 cloves garlic
  • 150 ml white wine
  • 1 tbsp plain flour
  • 100 g sundried tomatoes
  • 150 g spinach
  • 1 chicken stock cube dissolved in 250ml water
  • 300 ml double cream
  • 40 g parmesan
  • 350 g pasta shape of choice

Instructions
 

  • Melt butter in pan and cook chicken (seasoned with salt & pepper), then remove from pan
  • Cook pasta in salted water until al dente
  • Drizzle some oil into pan if needed, add onion and allow to soften
  • Fry garlic for a couple of minutes before pouring in wine, reduce by half then add flour and stir through
  • Add sundried tomatoes, spinach, stock & double cream then add cooked chicken back into pan
  • Stir through grated parmesan and allow to simmer for 5 minutes
  • Tip: the sauce will thicken if you leave it allow to combine for 5-10 minutes off the heat
