
Tomato Prawn Pasta (30 Minute Meal)
This spicy, sweet and flavoursome Tomato Prawn Pasta is a quick, easy and straight-forward 30 minute mid-week meal that will please the whole family!

Ingredients
- olive oil
- 2 small red onion
- 1 red chilli
- 2 cloves garlic
- 200 g smoked back bacon approx 1 pack, or bacon lardons
- ½ vegetable stock pot
- 400 g chopped tomatoes
- 1 tbsp balsamic vinegar
- 1 tsp honey
- ½ tsp chilli flakes
- 250 g prawns raw
- 250 g mezze rigatoni
Instructions
- Prepare vegetables: finely slice 2 small red onion and finely chop 2 cloves garlic and 1 red chilli (de-seed chilli if you don't want it too hot)
- Chop 200 g smoked back bacon into chunks
- Soften onions in generous amount of olive oil, then add bacon and cook for further few minutes
- Add chilli and garlic and cook for 2 minutes
- Add 400 g chopped tomatoes , 1/2 vegetable stock pot , 1 tbsp balsamic vinegar , 1 tsp honey , and additional 1/2 tsp chilli flakes if you like the sauce spicy / hot
- Cook 250 g mezze rigatoni in salted boiling water until al dente
- Add a dash of water to the sauce and simmer on low until sauce flavour intensifies and reaches desired consistency
- Toss through 250 g prawns and cook for a few minutes until they've turned from translucent to opaque.
- Toss through pasta once cooked and season (with salt & pepper) to taste
- Optional garnish: grated parmesan mixed with finely chopped parsley or chives
