Blue Cheese Pasta with Bacon and Mushroom

Ingredients
- 50 g salted butter
- 1 onion or 2 shallots
- 1 leek
- 300 g smoked bacon full pack
- 4 cloves garlic
- 200 g penne pasta
- 250 g mushrooms I use chestnut and button
- 65 g soft blue cheese I use half a pack of Saint Agur
- 140 ml double cream
- parsley to garnish
Instructions
- Melt 50 g salted butter in a pan and soften 1 onion and 1 leek
- Chop 300 g smoked bacon and add to the pan with 4 cloves garlic (chopped) and cook for a few minutes
- Boil 200 g penne pasta in salted water until al dente
- Add 250 g mushrooms (chopped), allow to soften before stirring through 65 g soft blue cheese
- Finally, add 140 ml double cream and simmer on low heat for 5 mins
- Garnish with parsley to serve

So tasty! I did add extra St Agur but that’s because I can’t help myself. Had to substitute mushrooms for some peas as the husband doesn’t like them! Grrr.
