Ingredients
  

  • 50 g salted butter ⁣⁣
  • 1 onion or 2 shallots
  • 1 leek
  • 300 g smoked bacon⁣⁣ full pack
  • 4 cloves garlic
  • 200 g penne pasta ⁣⁣
  • 250 g mushrooms ⁣⁣ I use chestnut and button
  • 65 g soft blue cheese I use half a pack of Saint Agur
  • 140 ml double cream⁣⁣
  • parsley to garnish ⁣⁣

Instructions
 

  • Melt 50 g salted butter ⁣⁣in a pan and soften 1 onion and 1 leek
  • Chop 300 g smoked bacon⁣⁣ and add to the pan with 4 cloves garlic (chopped) and cook for a few minutes
  • Boil 200 g penne pasta ⁣⁣in salted water until al dente
  • Add 250 g mushrooms ⁣⁣(chopped), allow to soften before stirring through 65 g soft blue cheese
  • Finally, add 140 ml double cream⁣⁣ and simmer on low heat for 5 mins
  • Garnish with parsley to serve
