
Family Friendly Lasagne
Family friendly ‘cause it’s packing SIX different vegetables into the ragu and honestly, it’s my tastiest one yet!!Fresh pasta sheets make a huge difference and I’ve also made MORE béchamel sauce this time so you get a nice’n’saucy lasagne!My casserole dish is @lecreusetuk – 9.5 x 9.5 inches & 4 inches deep, so I manage to get quite a lot of layers in there, you may need to amend if you have a shallower dish!

Ingredients
Beef Mince Ragu
- olive oil
- 2 carrots
- 2 stalks celery
- 1 onion
- 200 g mushrooms
- 1 leek
- 100 g pack spinach
- 1 tsp chilli flakes
- 1 tbsp. mixed herbs
- 3 garlic cloves
- 300 g streaky smoked bacon
- 500 g beef mince
- 250 ml red wine optional
- 100 g tomato purée
- 800-1000 ml pasatta
- 500 ml ham stock or beef stock
Béchamel
- 100 g butter
- 90 g plain flour
- 850 ml whole milk
- 4 whole cloves
Other Ingredients
- fresh lasagne sheets
- courgette optional
- grated mozzarella
- parmesan
Instructions
- Chop all veggies except courgette (2 carrots,2 stalks celery,1 onion,200 g mushrooms,1 leek,100 g pack spinach) finely & cook in oil with 1 tsp chilli flakes 1 tbsp. mixed herbs and 3 garlic cloves until softened
- In a separate pan, brown 500 g beef mince with 300 g streaky smoked bacon (chopped) – season with salt – then add 250 ml red wine & reduce so alcohol cooks off
- Add beef mince to cooked veg then t100 g tomato purée, 800-1000 ml pasatta and 500 ml ham stock – stir and cook on low/medium heat for approx 90-120mins until flavour deepens, sauce thickens and consistency is ragu-like.
- Béchamel: melt 100 g butter, add 90 g plain flour & 4 whole cloves then gradually add 850 ml whole milk in 4 parts, stirring, until sauce thickens
- If using optional courgette, then cut into slices and add as a middle later with some grated mozzarella
- Layer up lasagne with fresh lasagne sheets as seen in the video and bake in oven at 180 for 1 hour: 40 mins (I cover mine for this duration), then add parmesan on top, then another 20 mins
- Tip: if you’re cooking from cold i.e. you’re not cooking straight away and mince has been refrigerated etc. – bake for 1.5hrs total
