Christmas Leftovers Pie

There is very little that can’t be stuck inside a pie and Christmas leftovers is no exception! Whatever you’ve got left from Xmas Dinner on Boxing Day can be used inside this crispy, golden & flakey goodness! I’m eating with bread sauce which I’ve already posted the recipe for - bloody delicious.
I’m using an 8” wide x 1” deep pastry tin.

Ingredients
  

  • Christmas leftovers
  • gravy
  • shortcrust pastry
  • puff pastry
  • egg

Instructions
 

  • Pre heat oven to 190C
  • Add shortcrust pastry to pie tin, making sure to fit in around the edges and remove any excess pastry
  • Add greaseproof paper and baking beads before baking in the oven for approx 15 minutes
  • Remove from oven, remove beads & paper and brush with egg wash (this will help seal the pastry) - bake for further 2 minutes then remove from oven again
  • Add chopped Christmas leftovers - use whatever you have - then add plenty of gravy
  • Top pie with puff pastry cut to size and brush with egg wash also
  • Bake pie in oven for further 20 minutes
